3/4 cup butter
1 cup granulated sugar
1 tsp vanilla extract
1 egg
1/4 cup molasses
2 1/4 cups all-purpose flour
1 tbsp cornstarch
2 tsp ginger
1 1/2 tsp cinnamon
1 tsp nutmeg
1 pinch cloves
1/4 tsp salt
1-2 gala apples
2 tbsp coarse sugar
Directions:
Preheat oven to 325° F
Cream together butter and sugar until light and fluffy. Beat in egg and vanilla, then stir in molasses.
Whisk together flour, cornstarch, ginger, cinnamon, nutmeg, cloves, and salt.
Gradually stir in the dry ingredients to the molasses mixture.
Roll 2-3 Tablespoons of dough into balls and roll into coarse sugar
Slice apples as thin as you can about 1/8” and press slices into the center of each cookie dough ball.
Bake 15-25 minutes until edges are golden. Let cool a few minutes, and enjoy! :)
