1 lb Shrimp, peeled and deveined
3 tbsp Olive Oil
1 tbsp Unsalted butter
2 tbsp chopped Parsley
4 cloves garlic, minced
2 Green Onions, sliced
1/2 cup Red Bell pepper, diced
1 tsp Cajun seasoning
1 tsp Paprika
1/4 cup Stock
Salt and pepper, to taste
2 cups water
2 cups seafood stock (or chicken/vegetable)
1 cup Milk
1 Bay Leaf
1 cup Quick Grits
3 tbsp unsalted butter
1-2 cups white cheddar cheese
Salt to taste
Directions:
Bring water, stock, milk, bay leaf and salt to a boil.
Gradually whisk in the grits, a little at a time. Keep stirring with a whisk to prevent lumps.
Reduce heat and cook grits at a simmer, covered, stirring frequently for about 15 minutes.
Remove grits from heat; add butter and cheese, stirring with a whisk until cheese melts.
For the shrimp, in a large skillet heat oil and butter over medium heat. Add in shrimp, season with Cajun salt, and sauté for about 3-4 minutes. Remove them and set aside.
In the same pan, add garlic, paprika, bell pepper, parsley, and green onions. Add about 1/4 cup broth or more - adjust to preference . Continue cooking for another 3 minutes. Add shrimp towards the last minute. Adjust seasonings with salt and pepper.
Remove and serve over grits. Enjoy!
