Egusi Soup (adapted from “African Bites”)

  • 1 lb. smoked turkey (or beef or combination)

  • 1 tsp salt

  • 1/2 tsp paprika

  • 1/2 tsp pepper

  • 1/ 2 medium onion, diced

  • 1 red bell pepper, diced

  • 3 garlic cloves, minced

  • 1/2 cup palm oil, or any cooking oil

  • 1 cup ground egusi seeds

  • 1/3 cup ground crayfish

  • 2-3 cups spinach (frozen spinach is ok)

  • 2-3 Maggi seasoning cubes


Directions:


  1. In medium-sized saucepan boil meat with about 6 cups of water seasoned with salt, paprika, pepper, and some onion quartered. Boil with lid for 15-20 minutes until onions are tender.

  2. Remove the meat and onions and reserve the stock.

  3. Heat the oil in a heavy saucepan over medium heat. Add the onions and sauté the onion until it is translucent, about 5 minutes.

  4. Add meat, crayfish and continue cooking. Stir in the peppers and garlic. Add 1-2 cups of the stock. Bring to a boil and simmer for another 5 minutes.

  5. Then add ground egusi and keep simmering on medium-heat approximately 10 minutes. Add more stock to desired consistency or when simmering to prevent any burns.

  6. Throw in the spinach and let it simmer for about 4-5 minutes. Add in maggi cubes and more seasonings, if desired.

  7. Serve warm with Fufu and enjoy! :)
