2 eggs
1 cup pumpkin puree
1/2 cup oil
1 cup sugar
1/4 cup brown sugar
1/2 tsp vanilla
1 1/2 cups flour
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp cardamom
1/4 tsp allspice
1/4 tsp cloves
3/4 tsp salt
1 tsp baking soda
Pumpkin Seed Topping:
1/3 cup pepitas
1 tsp honey
1/4 tsp oil
Directions:
Preheat oven to 350ºF
Whisk together eggs in large bowl.
Add pumpkin and whisk until smooth. Add the oil, white and brown sugars and the vanilla. Mix until nice and smooth.
Sift in flour, baking soda, salt, nutmeg, cinnamon, cardamom, allspice, and cloves.
Stir until the flour has just disappeared. (Do not over mix)
For pumpkin seed topping, combine pepitas, honey, and oil and stir to combine.
Pour batter to a greased loaf pan. Smooth the top and scatter the pumpkin seed mixture over the top.
Bake for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Cut thick slices and enjoy! :)
