Vegetarian Biscuits & Gravy


Biscuits

1 3/4 cup Bread Flour (10 oz.) *

1 3/4 cup Cake Flour (10 oz.) *

1 tsp Salt

1 tbsp + 2 tsp Sugar (0.75 oz)

2 tbsp Baking Powder (1 oz)

1 1/2 tsp Baking Soda

1 cup + 2 tbsp Cold Unsalted Butter (9 oz.)

1 1/4 cup Buttermilk (11 oz.) **

Gravy

2 tbsp Unsalted Butter

8 oz. Cremini Mushrooms

2 tbsp All-Purpose Flour

1/2 tsp Fresh Sage, chopped

1/2 tsp Fresh Rosemary, chopped

1/2 tsp Dried Thyme

1- 1 1/2 cups Whole Milk (or Plant-based Milk)

Salt & Pepper, to taste


Directions:

  1. Preheat oven to 375°F

  2. Sift together flour, baking soda, baking powder, sugar, and salt in a large bowl.

  3. Shred very cold butter into the flour mixture or use a pastry cutter/ fork to cut it in. Combine together so the mixture is still crumbly.

  4. Make a well in the center of the mixture, and add in buttermilk. Stir until just combined. Then transfer the dough to a well-floured surface and use your hands to gently press the dough together.

  5. Once the dough is cohesive, fold over itself and flatten the layers together. Rotate and fold in half again, repeating this step about 5 times but making sure to not not overwork or knead the dough.

  6. Use your hands or a rolling pin to flatten the dough to 3/4” - 1" thick and cut out biscuits w/ cutter or round shaped item. Drop the biscuit onto baking sheet lined with parchment paper. (Re-roll scraps and cut out more) You should have 10-12 biscuits depending on the size.

  7. Brush biscuits with melted butter butter and sprinkle with finishing salt (optional)and bake for 20 minutes or until tops are lightly golden brown.


Gravy:

  1. Melt 1/2 tbsp butter in a saucepan over medium-high heat. Add the mushrooms and sauté until well browned and most of the moisture from the mushrooms has evaporated.

  2. Reduce heat to medium and melt the remaining butter in the pan. Add the flour and continue to stir until you no longer see white flour.

  3. Add the sage, thyme, and rosemary to the pan and stir to combine. Slowly pour in milk while stirring and bring to a boil.

  4. Reduce heat to low and simmer, stirring often. You can add more or less milk depending on the thickness you want. Season with salt and pepper to taste.

  5. Serve gravy over biscuits and Enjoy!



*Can substitute All-purpose Flour

** Can make buttermilk by adding 1 tbsp + 1 tsp to Whole milk or Plant-based milk as a vegan option.
